Patriotic Ice Cream Sandwiches

For the Fourth of July, these American flag ice cream sandwiches are perfect. They're a great treat for any summer get-together because they have vanilla ice cream with fresh strawberries and blueberries on top and soft sugar cookies on the bottom.

Ingredients:

• 2 cups vanilla ice cream
• 1/2 cup fresh strawberries, diced
• 1/2 cup fresh blueberries
• 12 rectangular sugar cookies

Instructions:

In a mixing bowl, combine vanilla ice cream, diced strawberries, and blueberries

Mix well

Spread a layer of the ice cream mixture onto six of the sugar cookies

Top each ice cream-covered cookie with another cookie to create sandwiches

Optional: Roll the edges of the sandwiches in red, white, and blue sprinkles for a festive touch

Place the sandwiches on a baking sheet and freeze for at least 1 hour before serving
