Heirloom BLT Salad with Coconut Bacon
You can make this Heirloom BLT Salad with Coconut Bacon instead of a BLT sandwich, and it tastes great. Fresh heirloom cherry tomatoes, avocado, crispy coconut bacon, and a tangy ranch dressing are all in it. Great for a quick and healthy meal!
Ingredients:
- 2 cups heirloom cherry tomatoes, halved
- 4 cups mixed greens
- 1 cup coconut bacon coconut flakes with smoked paprika and maple syrup
- 1 cup croutons
- 1/2 cup vegan mayonnaise
- 1/4 cup vegan ranch dressing
- 1/4 cup almond milk
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup fresh basil leaves, torn
- 1/4 cup red onion, thinly sliced
- 1 avocado, sliced
- 4 slices vegan bacon, cooked and crumbled
Instructions:
In a large salad bowl, combine the mixed greens, halved heirloom cherry tomatoes, torn basil leaves, and thinly sliced red onion
In a separate bowl, mix together the vegan mayonnaise, vegan ranch dressing, almond milk, lemon juice, salt, and pepper to create the dressing
Drizzle the dressing over the salad and toss gently to coat the greens
Sprinkle the croutons over the salad and add the avocado slices
Top the salad with coconut bacon and crumbled vegan bacon
