S'mores Cupcakes



These S'mores are a fun take on the classic campfire treat. Graham crackers, chocolate, and marshmallows all in the shape of a cupcake make for a delicious treat. Great for parties or when you just want something sweet!

Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 cup graham cracker crumbs
  • 1 and 1/2 cups mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners

In a large bowl, mix together flour, sugar, cocoa, baking powder, baking soda, and salt

Add eggs, buttermilk, oil, and vanilla to the dry mixture and mix until well combined

Stir in the boiling water until the batter is smooth

Fill each cupcake liner about 2/3 full with batter

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean

Remove cupcakes from the oven and immediately sprinkle graham cracker crumbs on top while they're still hot

Allow the cupcakes to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely

Once cooled, top each cupcake with mini marshmallows and chocolate chips

Use a kitchen torch to lightly toast the marshmallows and melt the chocolate chips

Sprinkle crushed graham crackers on top for added crunch and flavor
