Bacon Avocado Soup
This creamy soup is great for a cozy meal on a cold day because it has the richness of avocado and the salty taste of bacon. This soup tastes great and is also good for people on the keto diet.
Ingredients:
- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 avocados, peeled, pitted, and diced
- 1/4 cup heavy cream
- Salt and pepper to taste
- Chopped fresh cilantro, for garnish optional
Instructions:
Put the chopped bacon in a big pot and cook it over medium-low heat until it gets crispy
Take the bacon out of the pot and set it aside
Leave the bacon fat in the pot
Put diced onion in the pot and cook for about 5 minutes, until the onion turns clear
Cut up some garlic and add it
Cook for one more minute
Put in the chicken broth and raise the heat
Put in diced avocados and let it cook for 5 minutes
Blend the soup until it's smooth with an immersion blender
Add the heavy cream and season with pepper and salt to taste
If you want, you can serve it hot with crispy bacon bits and chopped cilantro on top
