Pumpkin Aquafaba Waffles



These pumpkin aquafaba waffles are a great way to start the fall. They are made with aquafaba, which is a magic ingredient that makes them light and fluffy. The pumpkin puree and warm spices give it a cozy taste that's great for fall.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/2 cup canned pumpkin puree
  • 1/4 cup aquafaba liquid from canned chickpeas
  • 1 1/2 cups almond milk
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract

Instructions:

Preheat your waffle iron according to the manufacturer's instructions

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves

In a separate bowl, whisk together the pumpkin puree, aquafaba, almond milk, maple syrup, melted coconut oil, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; it's okay if there are a few lumps

Lightly grease the waffle iron with oil or cooking spray if needed

Pour the waffle batter onto the preheated waffle iron according to the manufacturer's instructions

Close the waffle iron and cook until the waffles are golden brown and crispy
