Kale Quinoa Salad with Ricotta Salata



There is ricotta salata in this healthy and tasty kale quinoa salad, which is balanced out by the crunch of pine nuts and the sweetness of dried cranberries.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 4 cups chopped kale leaves
  • 1/2 cup crumbled ricotta salata cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts
  • 1/4 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup thinly sliced red onion

Instructions:

Run cold water over the quinoa several times to clean it

Rinse the quinoa and put it and 2 cups of water in a medium saucepan

Bring to a boil, then turn down the heat, cover, and let it cook for 15 minutes, or until all the water is absorbed

Take it off the heat and let it cool down

Add the chopped kale to a large mixing bowl and drizzle some olive oil over it

Rub it around until it starts to get soft

For the dressing, mix the lemon juice, minced garlic, salt, and pepper with the rest of the olive oil in a small bowl

To the bowl of kale, add the ricotta salata that has been cooled, the pine nuts that have been toasted, the dried cranberries, the chopped parsley, and the sliced red onion

Pour the dressing over the salad, then toss everything together until it's well mixed

You can serve the quinoa and kale salad right away, or put it in the fridge for a few hours to let the flavors mix

If you want, you can add more ricotta salata and pine nuts on top before serving
